The Plantation Pineapple "Stiggins' Fancy" Dark Rum is a little slice of goodness rolled with a bit of devilish history. Born during a time when some didn’t like the fact of how it was done but it was done type of deal era being the 1700’s Dickens time period. The liquor, drinking and debauchery during that era, well they could make a good many drinks to represent times past and remain on top for the next ten generations to say the least. Given the likes of Plantation Pineapple Dark one can only Guess:

Nose: Bananas, caramelized pineapple with hints of clove, cinnamon and notes of dark run and graham crackers

Palate: The rum does a great job of balancing the fruit and sweetness to form a great union. The banana returns but not overbearing, you just know it’s there alone with the vanilla hints of spice and a dash or two of cinnamon for good measure.

Finish: Medium to long finish, the sweet an fruity mix hangs well into the end while still holding onto its original favors. The layers repeat themselves and life is good again.

It’s one of those rums you have to love to want to love and this is the one. To add water or not is a matter of preference, sipping is a great idea neat or not did not seem to make a difference. You definitely do not want to miss the cocktails with this one though. It is a side attraction rather than the main attraction which makes it that much nicer to enjoy. The layers never stop and seem to keep building like banana pudding. They are all the same but repeat and it just gets better as it seeps in.
